What is foodpairing? How to combine products in order to create a tasty and – at the same time – unique dish?

What do you think of the combination of meat and dessert? Ice cream with fish sauce? Chocolate with sea salt or chili?

Although these combinations sound quite absurd, in reality the dishes prepared on their basis are exceptionally tasty. 

For some time now cooking has been more than a routine activity – it has become a real art. Science has also taken an interest in unusual taste combinations: it turns out that behind the fact that seemingly incompatible flavours turn out to be delicious, there is… their chemical composition.
